Today I wanted to share with you one of my favorite summer lunches. It’s delicious, healthy, and SUPER easy.
I have a crate of organic fresh fruits and veggies (from a local farm) delivered every saturday.
This week, there were some beautiful heirloom tomatoes in the crate, and I decided to make one of my favorites, Caprese Salad.
There are so many ways to make Caprese. I personally start by just cutting large tomatoes into simple wedges.
I also cut out the core
I had some beautiful cherry tomatoes, so I cut those in half and added those also.
Restaurants use various forms of soft mozzarella in a Caprese, but I particularly enjoy the texture and flavor of burrata mozzarella. I purchase mine from Whole Foods.
To dress the Caprese, I love a fresh pesto. Pesto can be purchased from most local grocery stores, but I will link a fresh recipe (here) if you’re interested.
Olive Oil and Vinegar
Pinch of maldon (coarse) salt and pepper
Garnish with Pine Nuts
Garnish with fresh Basil
I enjoy this with a glass of fresh brewed passion fruit iced tea.
3 Large Herloom Tomatoes
3-4 Tablespoons Burrata cheese
Pesto (Recipe Here)
Pinch of Coarse Salt
Pinch of Black Pepper
Olive Oil and Vinegar mixed together
Fresh Basil (optional to garnish)
Pine Nuts (optional to garnish)
