Coconut Chia Pudding
1/4 cup chia seeds
1 cup light or full-fat coconut milk
(or Almond Milk if you prefer)
1/2 tablespoon honey
Mix chia seeds, coconut (or almond) milk, and honey together in a bowl or glass mason jar. Let it set in the refrigerator overnight.
Remove it from the fridge, and make sure your pudding looks thick and the chia seeds have gelled. Top with fresh fruit and granola and enjoy. The one pictured here is with Almond milk.
Chia Açaí Berry Smoothie
1/2 Frozen Banana
1 Acai Packet
1/4 cup frozen raspberries
1/4 cup frozen blackberries
1 cup Coconut Milk or Almond Milk
Add all ingredients into a blender and blend until desired texture is achieved. Add Coconut Chia Pudding to the bottom of the glass and top with the berry smoothie. Add a few berries for garnish and enjoy!
