I’ve been feeling super inspired by my friend Carly Brannon’s way of feeding her family! Click on her name to check out her amazing blog and clothing store! I’ve never been much of a cook, but as a mother , I do care about offering my family healthy options and encouraging moderation and healthy eating choices. Carly does lots of family style platters both for snacks, and meals! You can find more of her ideas on her blog. I loved the idea of doing a platter because it’s super quick, easy, healthy & everyone loves it! I decided to start by making my own veggie platter as a healthy snack for my family. It turned out amazing and I thought I shared it with you!
Note: You can go bigger or smaller with these depending on how many you are serving. We shared this platter with our friends as an afternoon snack, but you could make lunch platters as well. =)
I started by taking a few eggs…
…and hard boiling them.
I cooked mine in boiling water for 13 mins. They were perfect!
Next I took some fresh veggies and began by cleaning and chopping them.
You can use whatever veggies you like.
I used cucumber and avocado.
…and some fresh carrots…
…peeled and chopped.
Added the hard boiled eggs (peeled and cut in half)…
…some DELICIOUS humus…
…and a few slices of pepper-jack cheese!
I imagine this will be a good after school snack option in the future! Something available, fresh & healthy! It’s also perfect for when you have guests and parties, and you can add or take away according to your own preferences. If you aren’t hungry for the entire platter, wrap it up and save some for later. =)
It’s crazy how filling this is and you will have ZERO guilt feeding this to yourself, and your family, friends, whoever!
- Orignal Hummus
- 2 Hard Boiled Eggs
- Pepper Jack Cheese
- Hard boil eggs in boiling water for 10-13 minutes. Once cooked and cooled, peel and slice in half.
- Wash and slice assorted veggies.
- Plate around a bowl of hummus.
