Chickpea Salad
3-4 Cups Spring Lettuce Mix
1 Can Chickpeas (I use TJ’s Greek Chickpeas)
1/2 Sliced Red Onion
1 Large Cucumber Sliced
5-6 Cherry Tomatoes
1/4 Cup Kalamata Olives Chopped
1/4 Cup Feta Cheese
Using a mandolin, thinly slice the red onions and set aside.
Slice a whole cucumber, cherry tomatoes, and chop kalamata olives.
Add to a bed of spring lettuce mix.
Simple Lemon Pepper Vinaigrette Recipe
1/4 Cup Apple Cider Vinegar
1/2 Teaspoon Lemon Zest
Salt & Pepper to taste
1-2 Teaspoon Dijon Mustard (more if you prefer)
1 Tablespoon Finely Chopped Chives, Parsley & Thyme
1/4 Cup Olive Oil
